Nectarine-Peach Cobbler

Adapted from SimplyRecipes

1 1/4 lb nectarines and peaches
1 tbsp fresh lemon juice
1 1/4 cup sugar
1 stick unsalted butter, melted
1 cup flour
1 tbsp baking powder
1/4 tsp salt
1 cup whole milk

Preheat oven to 375* F with rack in the middle.

Peel nectarines and peaches. Remove pit, and slice evenly

Transfer fruit to a heavy saucepan and add lemon juice and 1/2 cup sugar. Bring to a boil over high heat, stirring constantly. Then boil, stirring occasionally, 4 minutes. Remove from heat.

Whisk flour, baking powder, salt and remaining 3/4 cup sugar in a bowl. Then slowly whisk in milk until it is the consistency of pancake batter.

Pour melted butter into a 13x9 glass baking dish.
Pour batter over melted butter. Do not stir.
Then spoon fruit over batter, and pour remaining juice over batter. Do not stir.
Bake until cobbler is bubbling and top is golden brown, about 40-45 minutes.
Cool in pan until warm.

Serve with ice cream, whipped cream, a hot man.. whatever strikes your fancy. ;)
